Edamame is such an awesome food. It’s great as a snack all by its lonesome, boiled for five minutes or so, then salted lightly and eaten. It’s bright green and tastes like spring time… what more could you want?

While I generally love my edamame straight up, I also like to mix it up once in a while. Jill, a fabulous woman I know through a friend, brought the following recipe to a luncheon and it was devoured faster than anything else on the table. Edamame hummus - such a simple idea, but so good!

Edamame Hummus

2 cup edamame, flash boiled and cooled
1 Tbl olive oil
2 Tbl tahini
2-4Tbl lemon juice
1/4 tsp salt
1 tsp cumin
3 cloves of garlic
water to blend

Blender and mix until smooth, adding water as needed to achieve a texture you like. Add more lemon, garlic, or cumin to taste. Experiment! Have fun! Everyone loves their hummus prepared a little different… make your own master recipe. I’ve added cilantro for an excellent flavor. The sky’s the limit.

Serve with chips, crackers, pita, or whatever tickles your twinkie.
