I recently picked up a bag of Namaste Gluten Free Pancake and Waffle Mix, which is vegan by default unless you add eggs. Off the shelf, the mix contains sweet brown rice flour, tapioca flour, arrowroot flour, rice milk powder, cream of tartar, xanthan gum, baking soda, salt and ground vanilla bean. The directions tell you to add two eggs, two tablespoons of oil (I used organic coconut), and one cup of rice milk or water. I added two eggs worth of Ener-g egg replacer and whisked up the batter, then poured it into my trusty Cuisinart waffle maker on a heat setting of 3.5 (halfway between three and four). In less than a minute I had waffles that were so light and crispy they nearly floated away!
If you like denser waffles I might consider adding only enough Ener-g for one and a half eggs instead of two. These were dreamy though, and the rest went into my freezer for later in the week. Easy!
