I use only dried beans these days, to avoid the BPA in canned beans. However, I've tried and tried to cook dry beans with ingredients and always end up with crunchy beans. Best for me is to pre-cook the beans in a crockpot, and then add my seasoning/spices/veggies. I also freeze the pre-cooked beans to have for quickie meals later.

I've been meaning to make dried beans--we go through dozens of the canned variety. I didn't know you didn't have to soak them either. I'm trying this today. Thanks.

I learned a lot here: I don't have to do the overnight soak and that beans will stay fresh in an airtight container up to 1 week. Perhaps preparing beans isn't really as difficult as I've believed all these years?!

We're actually doing a lentil soup for xmas day this year. The caramelized onions on top really make the dish.

I've been cooking with dried beans more often and finding them much more flavorful than canned beans. It's hard to remember to get them started but I'm always glad when I do.

I'd not thought of cooking garlic with the beans -- thanks for the idea. I often throw in a small pinch of chipotle pepper (ground) to infuse a touch of heat.
